Are you saving money doing it yourselves? Well I can tell you this, If your buying your supplies for your party at a supermarket chain...probably not. If you take in all the expenses involved in cooking for your party, food (including all the condiments, oils, butters,etc..), the gas you use to shop, any paper products, and divide that by the number of guests you have you might be shocked. You should really look at what your getting from a caterer. You might realize that now your saving time AND money..
Aunt Ednas famous baked beans!! If you have a relative that ALWAYS wants to bring that one dish they make better than anyone else. Let them bring it. Catering menus offer a wide variety of choices. We always allow our clients to bring in a family favorite.

Why use a caterer?? Thats a good question. Maybe we should ask ourselves what reasons we have not too. Maybe we want to save ourselves some money? Maybe we cant have a pary without Aunt Edna's famous baked beans? Are we going to save time doing it ourselves???? Probably not a time saving idea.
If you've ever hosted a party and made the food too, you've probably figured out its really hard to enjoy your own party. Ive heard this hundreds of times by our clients. Right off the start you know using a caterer is going to save you some time both before the party(prep and dishes) and during the party when you really want to spend time with your guests anyway.

First blog recipe and its a doozy.. Chicken Brushetta

This little number has quickly became one of our most popular choices. It has a lot of ingrediants and takes a bit of time but it is very tasty.
Yield (4)
4- 4oz chicken breasts, 2 large eggs, 1 cup ap flour, 1 cup Italian bread crumbs, 1/2 cup olive oil
4 ripe roma tomatoes, 1/2 red onion, 1 TBL minced garlic, 1 TBL grated parmesean cheese, 1 bunch fresh basil chopped, 1 tsp black pepper, salt to taste, 1 cup olive oil
1 Trim any fat from chicken breats, pound chicken so it is even.
2 Dredge chicken in flour than egg. coat it with the Italian bread crumbs.
3 Heat olive oil in non stick saute pan and place breaded chicken in pan for 30 seconds on each side. Place chicken in a preheated oven(350) for 35-40 minutes
1 chop fresh roma tomatoes and red onion. Mix with reamaing ingrediants and let sit. (can make brushetta mix 1 day in advance.
2. Top the breaded chicken breasts with the brushetta mix and serve

First of all if you think your going to save money by doing it yourself, you may but you would have to shop where I shop, buy what I buy (Giant bulk beefs 25#s-30#s(can you get them in your ovens, know how long to cook them?) Point is buying things is very expensive when you shop retail ie.supermarkets. I have trained for years in this industry going to the growing fields in Yuma Arizona to Slaughterhouses in Phoenix. My vendors can not fool me on pricing, Chances are you WILL NOT save money doing this yourself. Maybe you like the stress of trying to coordinate all your food items so the come out hot at the same time, properly cooked? If your not this is another reason to use a caterer. Getting the Creative Juices flowing

Getting the creative juices flowing. In any business its very important to be creative(maybe not accounting). Its important to stay fresh especially the catering business. I just had some new menus printed and was able to add 3 new appetizers, 2 new entrees, and 2 new side items to the menu. For awhile I remember I just stared at the old menu and a blank pierce of paper with my computer on and then...NOTHING. It happens to all of us. A few important things to remember are (1) Your not alone, we all go through the dry spots or just a hum drum feeling when you just dont want to be creative. (2) Its ok to walk away and take a break from whatever it is your doing. Sometimes thats all it takes. (3) Find out what else will help you get your creative juices flowing. For me I like to go to Borders Books and walk around. I will pick up a couple books and start to imagine how the story goes. Ill make myself something to eat where I can be creative in the kitchen. or I will look at pictures of recipes and try to figure out how they made it. For you it could be walking your dog or going to the gym. Whatever it is know it and when you need to use it...
